Cod in tomato sauce & pearl couscous

That’s exactly where this dish comes in — cod with a tangy tomato sauce and pearl couscous. It’s simple, full of flavor, and the perfect balance of light and satisfying. Cod in tomato sauce & pearl couscous

Ingredients
  

  • 4 cod fillets á 150-200g
  • 2 tablespoon olive oil
  • 1 onion
  • 2 garlic cloves
  • 1 can crushed tomatoes á 400g
  • 2 tablespoon capers
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili flakes
  • Salt and pepper
  • Parsley for topping
  • 1 cup pearl couscous
  • 1 cube stock

Instructions
 

  • Finely chop onion and garlic.
  • Heat up olive oil in a large skillet over medium heat.
  • Sauté the onion for 3-4 minutes until soft. Add garlic and cook for another minute.
  • Stir in crushed tomatoes, capers, oregano, chili flakes and salt and pepper. Simmer on low heat for 10 min. Taste and adjust taste.
  • Cook pearl couscous according to package, and add cube of stock into the water.
  • Gently nestle the cod into the tomato sauce. Cover the skilled and cook for 8-10 minutes, or until the cod is opaque and flakes easily with a fork.
  • Serve pearl couscous in a bowl and top with cod and tomato sauce. Top with parsley.
