Cod in tomato sauce & pearl couscous
Tasty, quick to make and just delicious!
Ingredients
- 4 cod fillets á 150-200g
- 2 tablespoon olive oil
- 1 onion
- 2 garlic cloves
- 1 can crushed tomatoes á 400g
- 2 tablespoon capers
- 1 teaspoon dried oregano
- 1/2 teaspoon chili flakes
- Salt and pepper
- Parsley for topping
- 1 cup pearl couscous
- 1 cube stock
Instructions
- Finely chop onion and garlic.
- Heat up olive oil in a large skillet over medium heat.
- Sauté the onion for 3-4 minutes until soft. Add garlic and cook for another minute.
- Stir in crushed tomatoes, capers, oregano, chili flakes and salt and pepper. Simmer on low heat for 10 min. Taste and adjust taste.
- Cook pearl couscous according to package, and add cube of stock into the water.
- Gently nestle the cod into the tomato sauce. Cover the skilled and cook for 8-10 minutes, or until the cod is opaque and flakes easily with a fork.
- Serve pearl couscous in a bowl and top with cod and tomato sauce. Top with parsley.
