Cod in tomato sauce & pearl couscous

Cod in tomato sauce & pearl couscous

Ingredients
  

  • 4 cod fillets á 150-200g
  • 2 tablespoon olive oil
  • 1 onion
  • 2 garlic cloves
  • 1 can crushed tomatoes á 400g
  • 2 tablespoon capers
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili flakes
  • Salt and pepper
  • Parsley for topping
  • 1 cup pearl couscous
  • 1 cube stock

Method
 

  1. Finely chop onion and garlic.
  2. Heat up olive oil in a large skillet over medium heat.
  3. Sauté the onion for 3-4 minutes until soft. Add garlic and cook for another minute.
  4. Stir in crushed tomatoes, capers, oregano, chili flakes and salt and pepper. Simmer on low heat for 10 min. Taste and adjust taste.
  5. Cook pearl couscous according to package, and add cube of stock into the water.
  6. Gently nestle the cod into the tomato sauce. Cover the skilled and cook for 8-10 minutes, or until the cod is opaque and flakes easily with a fork.
  7. Serve pearl couscous in a bowl and top with cod and tomato sauce. Top with parsley.
