Weekend Eggs

Some weekends you need to re-charge by sleeping in and then kickstart the day with a hearty brunch. However, it shouldn’t leave you crushed and defeated, which this one does not! Weekend eggs are filling, packed with protein and feels warm. Best of it – add the topping you like best!

Ingredients
  

  • 4 eggs
  • 1 teaspoon salt
  • 1 tablespoon butter
  • Parmesan
  • Crème Fraiche
  • Greens
  • Red onions
  • Tomatoes
  • Olive oil

Method
 

  1. Whip 2 eggs in a bowl. (for one serving)
  2. Heat up a pan on medium heat, melt the butter and add the eggs. Let the eggs cook a little, then stir lightly and let the eggs set.
  3. Add salt, and fold it together. Carefully flip and let the eggs cook to set for a few seconds.
  4. While the first batch of eggs are setting, whip up the next batch.
    Remove the first omelette and repeat for the second one.
  5. Top the eggs with parmesan, crème fraiche, and add the greens of your liking on the side. Top everything with a drizzle of olive oil.
