Instructions
Whip 2 eggs in a bowl. (for one serving)
Heat up a pan on medium heat, melt the butter and add the eggs. Let the eggs cook a little, then stir lightly and let the eggs set.
Add salt, and fold it together. Carefully flip and let the eggs cook to set for a few seconds.
While the first batch of eggs are setting, whip up the next batch.
Remove the first omelette and repeat for the second one.
Top the eggs with parmesan, crème fraiche, and add the greens of your liking on the side. Top everything with a drizzle of olive oil.
